eggplant and tomato

this week i am trying to use up things in the freezer...so tonight i made a tomato and eggplant stew with poached chicken shredded on the top. heres how to whip it up- heat olive oil in a pan and add onion, sliced garlic and chilli, cook until soft. add chopped eggplant and stirfry before adding a tomato mix of chilli, herbs and spices. finally season and add a handful of baby spinach and stir in. meanwhile poach chicken in hot water, chilli powder and, salt and pepper. when it is all ready spoon the tomato mix onto a plate and top with the chicken. serve with green veges and either couscous or pasta.
