as the winter season started on june 1st and the rain and snow set in around the country it was time for a winter meal. i came across this fish tagine recipe which was lovely, served with couscous cooked in chicken stock, brussel sprouts and peas. it was an easy recipe which took all of 20 minutes to make. the main thing is not to overcook the fish, i used frozen fillets which were on special at the supermarket and this worked just fine. on google other fish tagines have prawns and scallops added too. but fish on its own was just fine. anyway if you fancy a warming meal try this : in a pot cook an onion with 3 crushed cloves of garlic. add a teaspoon of cumin and turmeric then add 4 teaspoons of harissa and cook briefly. add a tin of cherry tomatoes and around 12 olives, the rind of one lemon and pepper and salt. add about 1/2 cup of fish or chicken stock, maybe more might be needed if it evaporates. place fresh or defrosted fish fillets on top then cover with the pot lid. cook on a medium heat for around 10-20 minutes or until the fish is cooked. you don't want it to all fall apart. serve with hot couscous and coriander on the top. enjoy!
