tonight i made annabel's lemon and salmon risotto. its a lovely meal with a hint of saffron and lemon rind. fresh salmon is one of my favourite things so this meal is pretty good. i suggest you use real stock as it is the main base to the meal with the salmon. you can find the recipe in annabel's cookbook- 'the very best of annabel laingbein.' try it sometime as it makes a nice summer meal served with some green beans or asparagus. we have also had broad beans stirred through. enjoy!
