it has been a few weeks since i last updated my blog. it is normally on a sunday afternoon that i think i should write something. i have been working on an educational booklet in the evenings so don't spend too much time flicking around the net.
i have reached a point in my journey/recovery- i am not sure where i lie now.....maybe journey. my body seems to be moving more slowly and the physical affects of my illness is taking its toll. however, my mind seems more busy and more intense. i have decided to give 'therapy' a bit of a break and focus on my physical health for a while since the longer this goes on the harder it becomes to change.
that means following my plan.
making one goal a week to start challenging my fears/anxieties
have a bit more variety
put on weight....
seems easy enough.....now totally off key.
this cake is a cake which has only 3 ingredients in it. it was given to us at work by a nursing student who grew muscat grapes in martinborough. it is so simple and basic that i was sure it wouldn't work but it is nice and lasts well.
Fruit Cake:
1kg dried fruit (sultanas, raisins or a mixture)
2 cups of juice
2 cups self raising flour
Soak the fruit in the juice for at least 2 hours but it is even better if you can leave it overnight. stir occasionally. fold in flour and then bake for 1 and a half hours at 130 degrees.
