as pudding is apart of my 'mealplan' i have been trying to think of nutritious and yummy recipes which are good for winter. although rich puddings like self saucing puddings, cheesecakes and trifles are nice but when you are having to eat pudding every night, these are just abit too much. tonight i made an apple sponge which turned out rather good. i used an annabel langbein fruit sponge recipes but added some ginger and cinnamon into the sponge. it was a nice addition. so if you fancy a pudding tonight, give it a go- here is the recipe ala megan
stew enough granny smith apples to fill a dish and add a little vanilla extract and cinnamon then stir in. to make the sponge- separate 2 eggs, beat the egg whites until it forms soft peaks then slowly add 1/2c sugar and continue to beat. gradually add the 2 egg yolks in. finally sift in 1/2c cornflour, 1 T flour, 1 t baking powder and some ground ginger and cinnamon, then fold in. pour onto the apples and bake for around 30 minutes or until golden brown.
