
eggplants are really cheap at the moment and i am having to be creative using them when cooking for one. tonight i made a yummy eggplant stack using my mum's homemade pasta sauce. cutting the eggplant into rings i then spread some crushed garlic and added a spoonful of sauce before repeating with the rest of the rings. to finish i sprinkled parmesan cheese on top and seasoned. bake for 20 mins and serve! i served mine with lots of green veges. easy.
