meat for non meat eaters

jamie oliver was saying last week then a good portabello mushrooms are just as good as a piece of steak...maybe some would not agree. but tonight i thought i would do stuffed mushrooms with loads of veges. my secret you are asking is the stuffing, jammed packed off lots of favour- i thought i would be nice and share it with you. in a blender rip up 2 slices of vogels toast, 4 garlic cloves, 6 olives, half an onion, fresh mint and rosemary, pepper and sea salt then drizzle in some olive oil. blitz like crazy. once ready cut the stem off your mushrooms and pile high with the stuffing then sprinkle some good quality parmesan cheese on top and bake in the oven for around 20 mins. enjoy. let me know what you think of it?
