simple yet tasty

i have just made a very yummy omelet-a mediterranean omelet. packed full of spinach, mushrooms, olives and sundried tomatoes. heres the recipe if you want to try it, serves one.

4 button mushrooms, sliced
sundried tomatoes
good handful of spinach or silverbeet
black olives
2 free range eggs
garlic and chilli
pepper and salt

chop spinach, olives, mushrooms and sundried tomatoes. heat olive oil in a pan, add garlic and chilli then mushrooms and spinach. cook until spinach has wilted. take off heat. whisk eggs, olives and seasonings. in a non stick pan pour in the eggs and quickly cook, when nearly done add the spinach mix and sundried tomatoes. fold omelet in half and quickly turn onto its other side. serve with buttered pita bread and any other greens wanted. delish!
