try my warm couscous salad invention which i made to have with some fresh blue cod, mum and dad caught at stewart island....
mix 1 cup of couscous and 1 cup f boiling chicken stock and set aside to cook. meanwhile finely chop fresh parsley and chives, a red onion and a few small brown mushrooms and stir into the cooked couscous. in the microwave cook 3/4cup of frozen peas and then add to the couscous. mix all together. finally add pepper and smoked salt and mix in. it tastes super with fish but would be good with other meats.
the secret is chicken stock, it just helps add the flavour. i cooked my fish in the microwave with lemon juice and lemon slices on top with a little pepper and smoked salt. once it was cooked i poured the extra juice over the fish and couscous. YUM!
