with a hint of spring- little lambs, daffodils, sun and warmth. there is no way else to spend a sunday than doing odd jobs around the place. i aired all my bedding, picked flowers for my room and read the sunday paper.
we watched annabelle laingbein's free range cook show last night who made a tasty 'springtime' meal. see http://www.annabellelaingbein.co.nz. she BBQ a beautiful lamb rack marinated in her own salsa verde (green herb sauce) and served it on a broad bean mash, which i have copied below
broad bean mash:
broad beans (cooked and skinned)
1/2c parmesan cheese
3 cloves of garlic
black pepper and salt
olive oil to blend
add all ingredients into a blender and blitz until smooth. it should be the consistency of creamy mashed potatoes. it can made before time and heated in a saucepan with a little added water.
delish!
